At The Pottery Grill, the BBQ is slow cooked for up to 16 hours over a hickory fire before it is taken off the pit and the excess fat is trimmed by hand and then chopped. All of the BBQ at The Pottery Grill is cooked the old fashion way -- over a wood fire.
