Penrose is inspired by my great-great-great-grandfather, Norwood ‘Penrose’ Hallowell, a “Fighting Quaker” who traded pacifism for a rifle, and led the first all-black regiment against the Confederates in the American Civil War. With this restaurant, I celebrate his radical spirit and Quaker values—who he was as a man infuses everything from the décor to the menu. I wanted the space to be rowdy, but refined, like Boston’s Union Club, of which Penrose was a founding member. I also wanted the food to honor my roots. The eclectic flavors of North Africa, Sicily and Andalusia reflect the Moorish influences of Pen’s “Black Irish” heritage, while my ‘elemental’ approach to cooking embodies a deep Quaker simplicity. Every bite is a tribute, here’s to you, Penrose.
