Daniel Placencia, a rancher and cowboy, is proud of his cooking and loves feeding people.“People are the happiest when they're eating, especially good food,” Placencia said. He has entered his homemade chili, chock-full of meat and fresh peppers, in local cook-offs, including those at Stagecoach: California's Country Music Festival and the Coachella Valley Fiesta of Chilies. QUESTION: What prompted you to open a restaurant in Palm Springs?ANSWER: When I moved to the Coachella Valley five years ago, I really got back into cooking. I remodeled the kitchen at home, and my wife said to me, “You need to get yourself a restaurant.” My No. 1 concern is consistency of the food. We cook it fresh every day.
