La Perla is the passion of chef, and owner, Edwin Martinez Jimenez, who was born in Callao, Peru. He's also worked under some of the most respected Peruvian chefs around, garnering even more knowledge and helping him become the respected culinary leader he is today. Diners making their way to La Perla can experience all of this history in each and every dish, starting with the amazingly irresistible lineup of ceviches and stretching on through to entrees like the aji de gallina (pulled chicken stew in an aji amarillo cream), parihuela (fish and seafood bouillabaisse), and the seco de cabrtio, a lush and succulent slow braised lamb shank stew marinated in a cilantro chicha de jora with potato, beans, and jasmine rice. Excellent wines and not-to-be-missed desserts are also on the menu.
