Owner Paul Mauk grew up in Colorado eating Mexican food and eventually went to culinary school in Mexico City where he studied the regional foods of Mexico. In 1993, he opened Tequila Mockingbird in New Canaan. The restaurant imports spices from Mexico and has 110 different kinds of tequilas, more than anywhere else in the northeast, according to Mauk.
