Infinity Bistro is proud to have Chef Dan Fortin and Restaurant Manager Patty Marcum leading our friendly and experienced staff. The menu at Infinity Bistro is under the direction of Executive Chef Dan Fortin. A graduate of University of Southern New Hampshire, Chef Dan began his career as Sous Chef at Apricots in Farmington, CT. He soon broadened his passion for cooking and relocated to the Caribbean, serving as Chef de Cuisine for the award-winning Stone Terrace Restaurant in the U.S. Virgin Islands. Returning to the states in 2003, Chef Dan continued to hone his craft at several restaurants in and around Connecticut. His recent experience includes Sous Chef positions at Mantra of Boston and Trumbull Kitchen of Hartford. He served as Executive Chef at the Goodwin Hotel in Hartford, and co-opened the Back Porch Restaurant in Old Saybrook, CT. Blending flavors from Asian, Caribbean, Creole, and Mediterranean cuisine, Chef Dan offers guests of Infinity Bistro an eclectic menu with creative twists on American favorites.
