The result is an extremely hot fire that produces a pizza with a distinct flavor. The pizza has a light smokey, barbecued flavor. It’s a different kind of pizza.Coal fired pizzas trace their beginnings back some 100 years to Italian immigrants making new homes in New York. Bakers & cooks were unable to find an ample supply of wood, as was readily available in Italy. As a result, they started using coal. What came out of their new ovens was a cirspy crusted pizza known for its slightly charred crust.A combination of oak wood & coal shipped in from Pennsylvania is used to heat the oven at Pompeii. The herbs & vegetables are always fresh.
