It is the vision of the open kitchen to showcase a menu which is inspired by different cuisines which fall under the umbrella of the “Cuisine De Soleil” or the Sun Coast of Europe. The menu is based on regional Mediterranean specialties, which range from Spain to the Cote D’Azur, to certain regions in Italy such as Tuscany, Puglia and Sicily. In addition, classics dishes from different Mediterranean countries will be represented as well. The Concept, called “Mediterranean Fusion” onwards, will be descriptive of the ingredients utilized, as well as the cooking technique implemented to execute the idea. The cooking techniques will be implemented by a “Plancha”, equivalent to a Griddle, in order to fortify and extract the versatility of flavors and aromas of the aforementioned regional ingredients to their fullest potential. The utilization of a “Plancha” is a very Mediterranean method, popularized by most countries of that region.
