Our goal is not to manipulate food, but to accentuate the natural flavors of our products through slower methods of cooking and the smoke of the wood fire. Through this primitive technique, constantly moving and manipulating the live fire, we invest exacting attention to the preparation of each and every dish.Our managing partner, Ford Fry, named the restaurant after two characters in Huckleberry Finn, “The King” and “The Duke," a pair of grifters who ‘put on airs’ and pretended to be royalty, when in fact they were a couple of hillbillies who lived in the woods.
