Carmen Villegas and his wife first opened their doors in September 11, 2000 with a desire to offer food made with traditional Mexican ingredients, but with a gourmet twist.Chef Villegas has 17 years of experience with Lettuce Entertain U where he began his career at the Pump Room in downtown Chicago. He later helped open and manage several Lettuce Entertain U restaurants including Jim McMahon's, Maggiano's, and Papagus.
