The Tiki movement began in Hollywood, ca. 1934 with the opening of Donn the Beachcomber’s first restaurant. It was a movement that focused on large tropical drinks that usually included several kinds of liquors (predominantly rum) and “polynesian” food (a pan-Asian inspired menu, with a fair amount of fried options). “Proto-Tiki” seeks out the influences that led to the inception of the dominant cocktail trend of the 20th century by tracing the culinary heritages along the rum and sugar trade routes that developed the culture of the Caribbean and ultimately New Orleans.
