Twenty thousand years ago people ate only raw wheat germ. Eventually they crushed it and added water. This mixture was then cooked on heated stones. Evolution then brought us to Egypt, the cradle of civilization, where the first conical oven was invented, and thus the technique used today for wood burning pizza ovens.In 1991 Café Isis was started in downtown Baltimore. At that time there were no Middle Eastern restaurants. The owner came from New York where he was the head chef in an Italian style restaurant. The name Isis was chosen to show the connection between the ancient Egyptian Goddess of life and the life giving nature of excellent food. As Café Isis grew and expanded over the years, the menu has gradually changed to fill that niche. Today many of the items on the menu reflect a Middle Eastern flavor.
