I am the third generation at least to make maple syrup here in New England. I grew up helping my dad and older siblings in the sugar house. Often times my mom would even make supper in the sugarhouse so my dad could keep the fire going. I can remember riding on the tractor with my father and collecting sap from our many buckets, and storing all the years syrup in metal containers. Now we use tubing, bottle the syrup in mostly plastic jugs, and pump the sap from holding tanks into a gathering tank in our pickup- and we are by no means hi-tech. We keep it pretty small with about 200 taps, and a 2'x6' wood fired evaporator. We don't add anything other than a tiny bit of butter to keep the sap from "boiling over". We finish the syrup right in the evporator, filter it with paper and felt filters, and bottle it while it's hot! We call our place Linwood Acres because we purchased our home and land from my wife's grandfather, Linwood Ames. Lindy grew up on this road, and was a truck driver.
