La Ceiba Bistro will focus on Caribbean cuisine, with a selection of beer and wine. La Ceiba is a revival of sorts of another Ruiz restaurant, El Meson, which he operated for 12 years; before closing in 2012.Chef Ruiz has chosen to open in the Powderhorn Park neighborhood as he once lived very close to where La Ceiba is now.
