In the summer of 1998, Jay Schimmel moved back to his hometown with a two-year-old daughter and the dream of a restaurant appropriately outlined on a dinner napkin. Schimmel, a fifth-generation Mississippian and former All-American football player for the University of Mississippi, graduated first in his class at the California Culinary School and earned his chops in two of the West Coast`s most respected restaurant companies, Kimco and Real Restaurants. Now his namesake restaurant in the heart of Mississippi`s capital city has established itself as one of Mississippi`s finest dining experiences, not to mention become a favorite watering hole for legislators, business people, and hipsters.
