He transformed the sleepy coffee shop into a full service restaurant featuring Mexican flavors using local fish and vegetables. In 1998 he opened the Sag Harbor location.Estia's Little Kitchen from the Bridgehampton Sag Harbor Turnpike Tony's Coffee Shop was established on the Sag Harbor Turnpike, outside of Sag Harbor in 1959 by Elsie Gangie and her husband Tony. When Colin first walked through the door with his kids for a root beer float he instantly fell in love with the place. It was a plywood shell with an antique counter, a whirlitzer juke box and a garland stove.
