Owners, Bill and Mary Jo Demopoulos, have a long history in food service that dates back to 1980 when they founded Toby’s Sandwich Shop in Garfield Heights, Ohio. At that time, the only local, quick service food operations were McDonalds and Burger King. They had the desire to bring better food to the market. The original menu offered a large assortment of made-to-order sandwiches, salads & soups. In 1983, the Demopoulos’ duplicated and expanded this operation to an office building at 4807 Rockside Road in Independence, Ohio. While still operating the thirty-five seat Independence location, in 1985 they grew the Garfield Heights location to a full service, 110 seat Restaurant & Sports Bar. The menu grew considerably during the 1980’s and off-premise catering became a regular request. Guests will often refer to Toby’s (1980-1995) and the great food & service they had always received. For three seasons in the mid 1990’s, they also operated the concessions at The Glen Eagle Golf Course in Twinsburg, Ohio. After taking a vacation to Ireland in 1995, they decided to open a restaurant that would always remind them of the Emerald Isle.
