When we first decided to open a restaurant, we wanted something that would symbolize both Texas and the united states. we found a hundred year old barn in bastrop that was perfect.our emblem is ablend of Texas,American, & Italian flags. the naame "cavatore" & its coat of arms is over 800 years old & comes from a small medieval village in northern Italy, near acqui, in Piedmont; land of barolo,barbear & dolcetto d' alba wines, truffles & of course, fantastic food.
