After 2.5 years the doors are finally open at 7801 Westheimer. The much anticipated Fish & The Knife is the brain child of Tony Zheng. Tony moved here from Hong Kong in 1991 to pursue his ambitions. Zheng has had the famous Sake Café NOLA since 1998. The concept for Fish & The Knife came about by the attraction to expanding to the Houston area. Houston has always held a special place in our hearts for the mere fact of the way they accepted and assisted the Katrina Evacuees. Zheng wanted to expand to the Texas market knowing Houston was the only place to flagship Fish & The Knife. There are two separate kitchens; the fish-Sushi and The Knife - hot kitchen. The menu has adopted the influences from Japan, China and New Orleans French-Creole.This menu is the brain child of Executive Chef Bob Iacovone, who is also a former participant on Iron Chef. Knowing he wanted only the best for this project it took months for Zheng to convince Chef Bob to partner with him and he finally did.
