Chef Mark Daniel Mason blends modern technique with traditional Navajo, Pueblo and Hopi influence in his award winning dishes. Using local ingredients like Utah honey and Idaho-raised, hormone-free meats, as well as traditionally grown and prepared blue cornmeal and flour, all of the dishes are made to order and made from scratch, including the fresh family-recipe frybread using Blue Bird flour.
