Ph? is a Vietnamese beef and noodle soup. The soup includes noodles made from rice and is often served with lime, basil, bean sprouts and peppers that can be added by the diner. Ph? is often served in a bowl with a specific cut of white rice noodles (called bánh ph?) in clear beef broth, with thin cuts of beef (steak, fatty flank, lean flank or brisket). Variations feature tendon, tripe, meatballs, chicken legs, chicken breasts, gizzards or other chicken organs. It can also be made with chicken broth and cattle offerings like beef tripe and tendons.The broth is generally made with simmering beef (or chicken) bones, oxtails, flank steak, carred onion and spices, taking several hours to prepare. Seasonings include Saigon cinnamon or other kinds of cinnamon alternatives (either stick or powder), star anise, roasted ginger, black cardamom, coriander seed, fennel seed and clove.Garnishes generally include greens, herbs, vegetable and other accompaniments like dipping sauces, hot or spicy pastes, and flavor enhancers like lime or lemon. It can also be served with green onions or white onions. Thai basil, chili peppers and culantro can also be served as garnishes.
