Chipotle Mexican Grill's industrial interior has a bit of a cold feel to it, but the warm food it serves tastes so good. Steve Ellis first opened Chipotle as a standalone location in Denver in 1993. Ellis, a chef, only intended to open one restaurant. However, he had a change of plans after learning how U.S. food is processed. He decided to partner with responsible food producers to make affordable food available across the country. Ellis has been on a mission to provide the best ingredients raised with respect for animals, the environment and farmers. He calls it "food with integrity."
